1 cup Gluten-Free Flour Mix 1 cup SF Prunes, chopped
1/4 SF Date Sugar 1 cup Buttermilk
1 1/2 tsp. Baking Powder
1/4 cup unsalted Butter, melted
1 tsp. Baking Soda 1/4 cup Molasses
1-1/3 cup Gluten-Free Rolled Oats
1 lg. Egg lightly beaten
In a bowl, sift flour, sugar, baking powder, soda, and salt. Stir in oats and prunes. In separate bowl, whish buttermilk, butter, molasses and egg. Add to flour mixture, mix until just combined. Pour into greased muffin tins, bake at 400 F for 20-25 minutes, or until golden. turn onto rack.
