This cocoa powder is produced with the highest quality raw ingredients from the Yacao project in Dominican Repulic and used the most advanced technology to produce the finest cocoa ingredients.This production process utilizes fermented cocoa beans. After being dried by a Swiss designed Solar heated air system, the cocoa beans are then roasted and the outer hulls are separated from the nibs. The nibs are then finely ground into the cocoa liquor. Under high pressure and in large pressing machines, cocoa butter & cocoa powder are produced out of cocoa liquor. Cocoa Butter comes as a hot liquid from the pressing machines and is then cooled and packaged in boxes or stored in tempered tanks. COCOA POWDER is the dry pressed residue from the butter production. When it leaves the pressing machines it is in the form of very large,very hard disks.Cocoa powder is produced by thoroughly grinding thses disks into fine powder. Cocoa powder is naturally alkalized, which is a Dutch process to neutrilize the natural acidity of the cocoa. Our Cocoa powder is the high fat cocoa powder which contains 20-22% of cocoa butter and is used to coat or decorate cakes & candies. It is also excellent for flavoring creams.
