Amaranth Stir-Fry

SHILOH FARMS Amaranth has a pleasing aroma and delicate, nutty sweetness that makes this grain as versatile as it is nutritious. Delicious on its own, it also pairs well with other grains and beans; provides flavor and substance to soups, stews, or sides; and can be used to add texture and nutrition to pancakes, breads, or even candy.   

Amaranth falls into that group of pseudocereals (like quinoa and buckwheat) that are not actually grains at all, but are treated as such due to their nutritional content. As with many grains, amaranth is a rich source of protein, fiber, and minerals (including magnesium, phosphorus, and iron). It is unique in being the only grain to also contain significant amounts of Vitamin C! It is also significantly higher than most other grains in the important amino acid lysine, which has been shown to aid in muscle development and recovery.

Domesticated almost 8,000 years ago, amaranth was a culinary staple for the Aztecs and other early Native American civilizations. It also played a major role in religious practices and ceremonies, where it was offered as tribute, and remains an important part of cultural celebrations.

To Cook: Sort and rinse. Add 1 part of amaranth grain to 3 parts boiling water. Reduce, cover, & simmer about 15-20 minutes, or until grain is tender & liquid is absorbed. Using a smaller amount of water yields a chewier result; using more water will yield a consistency like mushy cooked cereal. 

Suggestions:
1. 
Add about ½ cup of cooked amaranth to muffin and quick-bread batters for a moist, chewy texture.
2. 
The seeds can be cooked with other whole grains in stir-fries or pilafs.
3. Add to soups and stews as a nutrient-dense whole grain thickener.
4. Sweeten with honey or maple syrup, then finish with toasted nuts and seeds for a hearty breakfast.
5. Pop amaranth in small batches as you would popcorn; top with milk and fresh fruit.
6. Sprinkle popped grains over salads, or use to add crunch to candies and brittles.
7. Combine cooked amaranth with raisins, nuts, cinnamon, and grated ginger for a delicious stuffing for winter squash.
