Shelf life: Approx 12 months.

Ingredients: Unrefined cane sugar, brown rice flour, white rice flour, potato starch, tapioca starch, corn-free baking powder (sodium acid pyrophosphate, potato starch, sodium bicarbonate, monocalcium phosphate), cinnamon, quar gum, salt.

Directions: Preheat oven to 325 deg F and grease 2-3 cookie sheets. Beat 1/3 cup butter/margarine*(or substitute) + 1/2 tsp gluten-free vanilla extract (optional) with a heavy duty mixer. Blend in 1/8 cup honey**(optional), contents of dry mix, and 1/4 cup water. Dough will form a soft ball, refrigerate dough at least 1 hour. Roll dough onto floured surface to 1/4 - 1/2 inch thickness. Cut into shapes. Place onto cookie sheet(s), spacing at least 2" apart. Bake approx. 20 minutes or until golden brown on bottom.

*For fat substitute, use 1/3 cup Spectrum shortening or 1/4 cup coconut butter. Low-fat, whipped, tub, or diet fat substitutes are not recommended with this mix.

**If honey is omitted: replace 1/8 cup honey + 1/4 cup water with 1/3 cup water.

FOR graham cracker crust: Blend mix contents with 5 & 1/2 TBSP melted butter/margarine (if needed, shortening/substitutes will give less flavor), 2 Tbsp water, 4 TBSP sugar, and 1/4 tsp vanilla. Press into pie pan. Bake at 350 deg F for 10 minutes.
