These are wonderful! I hate to make anything, but by doing the mix, you can administer the most important step yourself - slightly under-cook them! I slap the dough into a cake pan and make a giant bar to cut into squares later, so I don't even have to make each cookie. There is a hint of odd flavor, but nothing even close to all of those other nasty-gluten free things out there. These keep well and taste oh-so-good with a glass of milk.
